Gluten-Free Desserts, or Getting Through the Holidays

Having just left a party where I passed on both pizza and cookies, on the drive home, I dreamt of desserts I can eat.

So here’s a quick round-up of pins, saves and links I’ve emailed to myself over the past couple of months mostly of gluten-free desserts and sometimes little or no sugar too.

I must’ve known my sweet tooth could not go unsatisfied forever.

This is a good one to keep in your back pocket and when you’re craving warm chocolate chip cookies late at night, cinnamon baked apples might help curb it. Although, I think I’m still gonna have to do something about no more late-night chocolate chip cookie making, it’s kind of a tradition with the women in our family.

We love watching Cook’s Country any time we can catch it and the America’s Test Kitchen book is the staple cookbook in our kitchen. While I can’t say we’ve ever followed a recipe fully, it’s always the best place to start. Consider it the new go-to newlywed kitchen gift.

These Buckeyes are another great weapon in your calm-the-cravings arsenal. You probably have the ingredients and they look pretty quick from start to finish. Maybe even faster than chocolate chip cookies!

I’ve never made coconut macaroons before, but these have jumped to the top of my list and I think might make a less expected contribution to any party you may attend.

Most of my picks have been about one thing – satisfying my own sweet tooth – but that doesn’t mean you can’t bring gluten-free for everyone to enjoy. I think these travel well and are great almost-one-bite desserts.

I’ve had the ingredients to make these raw brownies for awhile now, but I keep eating the dates before I get around to making the cookies. Both the Raw Brownies and Raw Peanut Butter Oatmeal Cookies sound yum. Plus, no wheat or sugar! It’s a win-win.

Halloween Spice Cake Cookies

I’m a sucker for all things Halloween — especially for the sweets and cookies.  And October also happens to be National Cookie Month, so that spells double trouble for me!

For a few weeks now, I’ve been keeping my eyes peeled for a new Halloween cookie recipe to make this month. But due to a home project that got bumped up two weeks,  time became a major issue this weekend.

So I had to think fast and improvise. I ran to the grocery store and walked around the baking aisle when I saw a row of boxed cake mixes on sale. I remembered that my mother also makes the best cake mix cookies each Christmas, so I grabbed a box of spice cake mix, a can of pumpkin and a can of pre-made cream cheese frosting.

The recipe, for Pumpkin Spice Cookies did just the trick. It was the easiest and most impressive 30-minute cookie recipe I’ve made in ages. Simply add a can of pumpkin puree to the dry cake mix, and combine. Then add walnuts, bake and frost with cream cheese icing. I was surprised they were so moist and fluffy!

So with Halloween in two days, and kiddos running every which direction this week, the good news is you still have time to make wonderful treats that will work for Halloween or Thanksgiving.

Pumpkin Spice Cookies

1 (18.25 ounce) package spice cake mix

1 (15 ounce) can solid pack pumpkin

1 can cream cheese frosting

1/3 cup walnut pieces (optional)

1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

2. In a large bowl, stir together the cake mix and pumpkin until well blended. Drop by rounded spoonfuls onto the prepared cookie sheet.

3. Bake for 18 to 20 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

For the Joy of Juicing

Just in time for our 56 degree high today, I’d like to talk juicing. Nothing like impeccable timing, huh? If you’re looking for something a little more weather appropriate this weekend, I’m going to try out a healthier version of my chai tea latte mix this weekend and if it is as addicting as the one I used to use, I’ll certainly let you know.

However, today, juicing. Yum. I’m not sure I know anyone who wouldn’t really enjoy a glass of fresh juice. Even if you think it sounds funny, one sip and I bet you’d try any of our concoctions.

One of my favorite mixes:

  • Carrots
  • Beets
  • Celery (just one)
  • Ginger (cut off about 1″)

Just mix as much as you want of everything except the celery. I* think it starts to take over the flavor so generally just add one in any mix.

One of the benefits of juicing is the methodical prep work and then the refreshing reward at the end. If you’re really lucky, you’ll get smiles all around.

Another great mix:

  • Apples
  • Carrots
  • Watermelon

Same as above. Really, you just can’t go wrong here. Just keep adding, it’s also a great way to use a bunch of veggies that you think you won’t be able to get through before they are past their prime.

*Full disclaimer. I say “I”, but Jeff does all the juicing. Thank goodness. But I can say he (we) are super happy about our new, very easy to clean juicer. It’s this one and only chosen for the power, online reviews and budget. Getting 2 thumbs up over here.

Road Trip time! The Prairie Hive gang is hitting the highway this weekend with a road trip to be featured in our Fall Issue (check back on September 10 to see our destination!).  With summer drawing to a close, my guess is there are lots of families out there doing the same before school starts.  Whatever your destination is this weekend (even a hammock in the back yard) – here are some great finds from this week!

I hope you’ve had a chance to check out the new issue of Prairie Hive Magazine!  We were inspired by the architecture of the home as well as the homeowner’s eclectic collection of Mexican art to throw a laid back summer fiesta, complete with a margarita bar!  The margarita base is served in a pitcher, then each guest can customize their drink with one of three add in flavors…tart grapefruit, spicy jalepeno, and juicy watermelon!

Margarita Base

12 oz tequila

10 oz orange liqueur

10 oz fresh squeezed lime juice

(makes approx. 8 drinks when combined with mixers)

Jalapeno Margaritas

Rim glass with mixture of equal parts chili powder and salt.  Add 2-3oz (to taste) Jalapeno Syrup* to 4 oz. Margarita Base, garnish with limes.

Jalapeno Syrup

1/3 c apple cider vinegar

1/3 c sugar

5 medium jalapenos, stems removed and cut into 1/4″ slices

Put the vinegar, sugar and jalapenos into a small saucepan. Bring to a boil for five minutes. Allow to steep for 20 minutes, then strain and chill the syrup.

 

Grapefruit Margaritas

Rim glass with sugar.  Add 3 oz. Ruby Red Grapefruit juice to 4 oz. Margarita Base, garnish with grapefruit slices.

 

Watermelon Margaritas

Rim glass with salt.  Add 3 oz. Watermelon Juice* to 4 oz. Margarita Base, garnish with lime.

*To make Watermelon Juice, cut watermelon into chunks and place in food processor or blender to puree, then strain.

For no particular reason, I just like the image above.  Colors + Cake, what can be wrong with that?  Maybe it’s my new diet, but I can’t stop thinking about food this week. Only my sense of restraint kept my Pinterest boards from filling up with pretty pictures recipes that I will never, ever attempt (although a few crept on for the photography alone!).  With bare arm season here and my “just had a baby” excuse wearing thin, it’s time to get serious…so my recipe browsing will be on my new favorite site, Skinnytaste (am I late to the party on that or what?).

Hope you’re having a wonderful Memorial Day Weekend! Luckily for me, I’m spending the weekend relaxing and kicking back with good friends at the lake.

In planning our yearly outing, I’m always looking for a new — or at least different — drink recipe to try. So I was inspired from reading last week’s New York Times Magazine article, appropriately called “It’s Time to Update the Wine Spritzer.”

I’ve always been a fan of adding some ginger ale or Sprite Zero to my sauvignon blanc or pinot grigio. Add a twist of lime, and you’ve got yourself a boat-worthy afternoon cocktail.

But if you’re feeling more adventurous, a long weekend is the time to try something new and out of your comfort zone. Here’s a fun blackberry spritzer recipe made with fresh berries– which are ripe for the pickin’ now — courtesy of Taste Food Blog.

Blackberry Spritzers

Blackberry Syrup
Makes about 1 cup

12 ounces blackberries
1/2 cup freshly squeezed lime juice
1/2 cup granulated sugar

Combine all of the ingredients in a saucepan. Bring to a boil. Reduce heat and simmer until blackberries soften and release their juices, about 10 minutes. Cool. Purée in a food processor, then strain through a fine-meshed sieve. Discard the seeds.

Blackberry Spritzers
Makes 1 

Ice cubes
1 part blackberry syrup
2 parts sparkling water, white wine or Proscecco
Lime wedge and mint leaves for garnish

1. Fill a wine or cocktail glass with ice.  2. Add syrup and sparkling water. Stir. Garnish with lime and mint.

Summer Squash Pasta – Recipe

Since my parents are at the farm these days they took over my grandpa’s garden this year.  And boy is it going crazy!  They are pulling in tons of yellow squash, zucchini, onions, and more.  I love this time of year.

For dinner I decided to throw together a quick and easy pasta dish using some of the farm fresh veggies and I thought I would share!

Summer Squash Pasta 1 Summer Squash Pasta   Recipe

Bucatini (or your favorite pasta), Olive Oil, Garlic, Yellow Squash, Zucchini, Mushrooms, Onion, Basil, Red Pepper Flakes, Salt

Summer Squash Pasta 2 Summer Squash Pasta   Recipe

Chop all vegetables to similar bite sized pieces

In a skillet heat a drizzle of olive oil, garlic, and red pepper flakes

Add squash, zucchini, and onions and saute a couple of minutes

Add mushrooms

I like to saute the veggies at a high temp so that they get a nice golden color without getting mushy.  While cooking at a high heat be sure and keep those veggies moving pretty regularly so they don’t burn!  Once the mushrooms start to get some color add salt to taste.

While your pasta and veggies are finishing up chop your basil.  A great and easy way to cop the basil is to roll all the leaves into what looks like a basil “cigar”.

Slice the basil “cigar” into thin strips.

Once pasta is finished cooking, drain and drizzle with olive oil.

Combine pasta and veggies and then sprinkle with your fresh basil and Parmesan cheese.

 

Summer Squash Pasta 121 Summer Squash Pasta   Recipe

This dish would be great served with grilled chicken or shrimp on top, or as a side dish.  This type of recipe is easy to adjust with whatever veggies you have on hand….or with whatever veggies you like.  You can substitute away and it would still be delicious!

Summer Squash Pasta (this recipe is for approximately 2 servings)

4 oz Bucatini pasta (you can sub with spaghetti or other pastas)

1/2 onion, chopped

1/2 yellow squash, chopped

1/4 (of a large) zucchini, chopped

1/2 cup mushrooms, sliced

olive oil (drizzle for saute and a drizzle over pasta)

2 cloves garlic, minced

red pepper flakes to taste

salt to taste

parmesan cheese

1.  Cook pasta, be sure and salt the pasta water a lot!  Trust me, it makes a difference!

2.  Chop veggies into similar bite sized pieces

3.  Drizzle pan with olive oil, add garlic and red pepper flakes and allow to cook until fragrant

4.  Add squash, zucchini, and onions and saute for a couple of minutes

5.  Add mushrooms, once the mushrooms start to get some color add salt to taste.  Cook the veggies at a high heat to get the great color without becoming mushy

6.  Chop basil

7.  Drain pasta and drizzle with olive oil

8.  Combine pasta and veggies, sprinkle with basil and Parmesan cheese

Enjoy!

It’s Cinco de Derby – Happy Weekend!

Cinco de Derby?  Derby de Mayo?  Whatever you’re calling it, there are lots of reasons to celebrate this weekend (it’s also a Super Moon Saturday night!).  Here are a few of my favorite ways to combine the festivities:

Pick your poison: Mint Margaritas or Tequila Juleps.  Then tomorrow morning, try one of our Micheladas to cure your hangover.

Having a party?  Combine this DIY Fiesta Garland with a vase of roses.  Or try these Straw Flowers to add some preppy to your fiesta…

To serve: Pinata Cookies (adorable!) or Corona Cupcakes.

And finally, what to wear: The Sombrero Fascinator.  I kind of wish I had one of these just to wear around the house today.

Michelada Time!

One of my favorite parts of visiting family in Texas is getting together for Mexican food and of course, drinks!  A couple of years ago, my cousins introduced me to the Michelada…kind of a bloody mary/beer combo.  Just in time for Cinco de Mayo, I thought I’d pass along the recipe!

Ingredients:

-1 light Mexican beer, like Corona

- 2 tsp. Worchestershire Sauce

- 2 tsp. Tabasco Sauce

-1 tsp. Soy Sauce

- Lime

-Salt (for the rim)

-Freshly ground black pepper

I like mine in a frosty mug, but choose your glass according to your preference.  Run the lime along the rim of the glass and dip in salt.  Add the Worcestershire, Soy, and Tabasco Sauces to the glass.  Squeeze about half the lime’s juice in (or to taste), then add the beer.  Garnish with black pepper and additional lime slices.

Enjoy!  Perfect for Cinco de Mayo OR the next morning (this is rumored to be a great hangover cure, though I’ve never tried it)!  For more Cinco de Mayo party inspiration, check out last May’s fiesta!
